Zingerman's partner talks planned expansion
BY DYLAN CINTI
Zingerman’s Delicatessen is hoping to move forward with a planned 9,000-square-foot expansion, according to Grace Singleton, a Zingerman’s managing partner.
Singleton said the expansion has been in the works for over three years.
At a public meeting yesterday, Singleton and other Zingerman’s representatives explained the need for the expansion.
According to Singleton, Zingerman’s would use the expansion to increase service and enlarge its kitchen, as well as provide better accessibility to patrons and staff.
The proposed building would sit behind the current restaurant and will be connected through a glass atrium, Singleton said. She added that it would include a sandwich-ordering counter and additional seating for customers dining in.
Both the Planning Commission and Historic District Commission must approve the design plan before Zingerman’s can begin constructing the new space.
Singleton emphasized that the planned expansion would blend in with other buildings in the Old Fourth Ward Historic District, where the restaurant is located.
Singleton said Zingerman’s hopes to begin construction by Spring 2011.
