You've probably heard of corned beef hash (Angelo's does a great one) but I've got a recipe for Smoked Salmon Hash that's deeeelicious (and easy). It was inspired by the fabulous Smoked Salmon Hash at one of my favorite brunch places, Cafe Zola. I use tarragon in the recipe, but if you don't like it, try dill or even parsley.
Erin's Smoked Salmon Hash with Sour Cream Dijon Sauce
Tools:
-Pot to boil potatoes
-Pan to fry hash (if you've got a deep frying pan, you can use it for both boiling and frying)
-Cutting board
-Knife
-Bowl
-Spoon
-Colander (not necessary but makes it easier to drain potatoes without burning yourself)
Ingredients:
Hash
-Two fillets of smoked salmon, roughly chopped into bite-sized pieces (I get packages of it at Trader Joes)
-1 lb of washed potatoes (your choice--redskins are good, or fingerlings, or some other small variety)
-1 tsp. dried tarragon (or approx. 1 tbsp. fresh)
-1 small yellow onion (chopped or sliced, however you prefer)
-salt
-pepper
-olive oil
Sauce
-1/4 c. sour cream
-1 1/2 tsp. dijon mustard
-1 tsp. lemon juice
-pinch of cayenne pepper (optional)
-pinch of dried parsley (optional)
Directions:
1. Boil potatoes, whole, until tender (about 20 minutes for small potatoes). To check doneness, stick a fork in one and lift. If the potato falls off, they're done.
2. Drain potatoes and let cool for a couple of minutes.
3. Put a couple of teaspoons olive oil in the frying pan. When hot, add onions and saute on medium heat.
4. Chop potatoes into bite-sized pieces. Add them to the frying pan.
5. Let everything fry for a few minutes, stirring occasionally, until the onions are translucent and the potatoes are browned.
6. Add the chopped salmon, the tarragon, salt and pepper. Stir it all up, and you're done!
7. For the sauce: mix all the ingredients in a bowl, and serve on top of hash.
Makes 3-4 servings, and takes about 35 minutes.
