Super Easy (and Healthy!) Spinach Pie

It may be ugly...but it's delicious.

I love spinach pie. Flaky Phyllo dough, lots of feta, and a touch of lemon. All baked to perfection. Spinach pie, however, is not something I can make quickly and easily for dinner. It’s also not the healthiest option for a meal—the nutrients of the spinach are drowned in cheese, dough, and eggs. But thankfully, I have discovered a wonderful solution to this problem: the spinach casserole.

Okay, so it may not have the crust, but it has everything else. And it’s actually good for you. And easy to make, so you can come home and mix it together and pull a hot, delicious meal (or two or three) out of the oven in 30 minutes. It takes every ounce of my effort to not make this everyday.

The picture may not look very pretty, but the best food lacks the beauty, right? Don’t be discouraged…it’s easy and cheesy and perfect.

Spinach Casserole Recipe

2 10oz packages of frozen spinach, defrosted and squeezed dry
3 egg whites
¼ cup flour
2.5 cups low-fat cottage cheese
¾ cup shredded Mozzarella cheese
½ cup shredded Monterey Jack cheese

Mix the egg whites and flour together. Add the cheeses and mix together. Add the spinach. Bake in any dish you want (casserole, 13x9, loaf pan, etc) for about 30 minutes depending on the depth of the pan. It should be done when it’s bubbling and light brown on the edges.
