Microwave Monday: Mug Eggs

If you want a hot breakfast but are rushing to class and have no time, consider Mug Eggs.
What, you ask, are Mug Eggs?
They are scrambled eggs, made in a coffee mug. They take less than two minutes to make and produce delicious fluffy scrambled eggs without dirtying a pan and waiting to cook them. Here's what you do:
Take a regular coffee mug and spray the inside with nonstick cooking spray, like Pam. Add your eggs and a touch of milk and whisk with a fork. If you want to be extra fast or have less calories/fat, use some liquid egg substitute like Egg Beaters. Pop the mug in the microwave for 40 seconds, take it out, and stir with your fork. Put it back in for another 40 seconds (this will vary depending on your microwave.) Take the eggs out, stir again, and voila! Scrambled eggs! Put 'em in a pita or tortilla maybe with some veggies, cheese, or ham if you're taking it to go, and you can eat it on your way to class.
That was faster than waiting in line or a drive-thru of a fast food restaurant, right?
