Easy Pumpkin Cupcakes

Ok, so I know that the brownie recipe that we posted previously was too complicated for those of you not experienced in the kitchen. If you're ambitious though, try it out--they really are amazing. For those of us with less time and experience, I've got a recipe for you using a fall favorite, pumpkin! I got the idea of adding pumpkin to boxed cake mix from Hungry Girl http://www.hungry-girl.com/, a great website with low-fat and low-calorie recipes for normal people. I took that idea and created my own pumpkin cupcakes.
Supplies:
Oven
Cupcake tin
Cupcake lining papers (unless you feel like greasing a whole cupcake tin, but that's a pain in the arse)
Mixing bowl
Spoon or spatula
Ingredients:
1 Box of spice cake mix (or, add a tablespoon and a half of pumpkin pie spice to regular yellow cake mix)
1 large can pure pumpkin (~30 oz size)
1 can cream cheese icing
Orange food coloring and/or black sprinkles, if you're feeling festive
Directions:
1. Combine spice cake mix and whole can of pumpkin. Stir until all particles are thoroughly moistened.
2. Pour into lined or greased cupcake tin so that each compartment is 2/3 of the way full.
3. Bake according to the box's directions.
4. Cool cupcakes, then frost. If desired, first mix frosting with food coloring for extra prettiness and fun.
